Macallan Distil Your World Paris Was Aged in Bourbon and Cognac Casks


It seems like we just reported on a new whisky from the Macallan—because we did, the James Bond-themed Diamonds Are Forever 55th Anniversary release that dropped earlier this month. That whisky changed up the Macallan’s tried-and-true sherry cask maturation formula a bit, as does the latest entry in the Distil Your World series, a tribute to Paris that includes the rare use of Cognac casks by this Speyside distillery.

Distil Your World Paris is the fifth in the series—previous editions include New York, London, Mexico, and Hong Kong. These whiskies are a collaboration with the Roca brothers, the owners of Spanish restaurant El Celler de Can Roca, which has been named World’s Best Restaurant twice. As is always the case with these Macallan special editions, whether it’s this series or the Harmony Collection, the concept is always a bit abstract because you have to use your imagination to really taste a particular place in a whisky.

But according to Macallan master whisky maker Kirsteen Campbell, a visit to Paris and the tradition of gastronomy there (“l’art de la table“) was the inspiration. “The Macallan has always been rooted in storytelling, and every creation we craft carries its own,” she said in a statement. “This Distil Your World edition feels especially meaningful to me because of the experiences, sights, and emotions I brought back from Paris. In building its flavors, I layered new ideas over the signature character of the Macallan to create something familiar, yet a little unexpected.”

To that end, the whiskey was aged in a combination of casks. The traditional European and American sherry-seasoned oak are the core of the maturation, but there are also ex-bourbon barrels and Cognac casks in the mix—both of which are not unheard of but relatively unusual for the Macallan. We did not get a sample to try, but the official tasting notes describe almond croissants, rose, sweet nectarines, sandalwood, and vanilla pods on the nose, followed by buttered pastry, brioche, peach melba, mille-feuille, and toasted oak on the palate. The whisky was bottled with natural color at 47.2 percent ABV.

The special packaging for this release was designed by Parisian artist Cassandre Montoriol, and a companion documentary film was produced following Kirsteen Campbell and Joan Roca on their trip to Paris to explore the culinary scene and gather ideas. “Our challenge was to create a menu inspired by the essence of Paris, an experience where French haute cuisine meets l’art de vivre and l’art de la table,” said Roca. “With 44,000 restaurants and the highest number of three-Michelin-star establishments, Paris reflects the quality, commitment to excellence, and elegance of French gastronomy.”

Distil Your World Paris will be available starting in April at specialty retailers in the U.S. (SRP $4,750). You can also join the Macallan Society if you want early access to a bottle.
