Highland Park’s New Whisky Is Made With a Michelin 3-Star Chef


Highland Park is considered by some (this writer, for example), to be one of the best scotch distilleries around—its 18-year-old expression was recently named Robb Report’s best single malt of the 21st century. So when the news arrived that the distillery was collaborating with Björn Frantzén (who has not one, not two, but three Michelin three-star restaurants) on a new whisky, expectations were high—and fortunately the quality of the liquid has lived up to them.

Highland Park, which was founded in the late 18th century, is located on Orkney, an archipelago in the far north of Scotland. The area was settled by the Vikings centuries ago, and the distillery has leaned into those roots over the years, giving its core range names like Viking Pride. A couple of years ago the lineup was rebranded by parent company Edrington, which also owns the Macallan, but while those names have been removed the quality of the whisky remains just as good.

Which brings us to this new release, a 16-year-old single malt with a name that’s less Viking and more whimsical. Between You and I was created in collaboration with Frantzén, the recipient of three Michelin stars with restaurants in Sweden and Singapore. According to the brand, no traditional tasting notes are being provided for this new whisky, and instead you are supposed to explore your own “personal memories and emotions inspired by the whisky, mirroring Frantzén’s own sensory experience.” Tasting notes are entirely subjective anyway, so while the concept here might seem a little nebulous, the point is for you to ask yourself lofty questions about what flavors, sounds, places, and memories you taste, and create your own sensory experience as you sip (arguably a good practice no matter what whisky you’re drinking).

The whisky was aged simultaneously in a combination of barrels—sherry-seasoned European and American oak, ex-bourbon barrels, and in a first for the distillery, virgin Swedish oak— before being blended together by former master whisky maker Gordon Motion. That last type of wood is obviously a nod to Frantzén’s heritage, although the whisky would have been put into those casks well before this partnership was created. Not to influence you at all because clearly this is supposed to be a personal journey, but based on my experiences here’s what I tasted in the whisky (48 percent ABV with no color added). There’s a signature touch of peat on the palate as you sip, that subtle wisp of smoke that Highland Park is known for, which is rounded out by notes of citrus, spice, vanilla, butterscotch, green apple, and dried fruit. Of course, you might taste something completely different, which seems to be the point.
